I have set watchmen upon thy walls, O Jerusalem, [which] shall never hold their peace day or night: ye that make mention of the LORD, keep not silence
1 Thessalonians 4:16-18 KJV
For the Lord himself shall descend from heaven with a shout, with the voice of the archangel, and with the trump of God: and the dead in Christ shall rise first: Then we which are alive and remain shall be caught up together with them in the clouds, to meet the Lord in the air: and so shall we ever be with the Lord. Wherefore comfort one another with these words.

Did the animals exhibit this behavior in the days of Noah? What is the significance of them walking in a circle?
I know the Lord God is the beginning and the ending. A circle could be used to symbolize that. A circle has no point where it begins or ends, like God.
Hebrews 7:3
Without father, without mother, without descent, having neither beginning of days, nor end of life; but made like unto the Son of God; abideth a priest continually.
Revelation 1:8
I am Alpha and Omega, the beginning and the ending, saith the Lord, which is, and which was, and which is to come, the Almighty.

A couple questions I have:

What is the significance of them walking in a circle?

could be used to symbolize that. A circle has no point where
it begins or ends, like God.

Amplified Bible
5 But He was wounded for our transgressions,
He was crushed for our wickedness [our sin, our injustice,
our wrongdoing];
The punishment [required] for our well-being fell on Him,
And by His stripes (wounds) we are healed.
6 All of us like sheep have gone astray,
We have turned, each one, to his own way;
But the Lord has caused the wickedness of us all [our sin,
our injustice, our wrongdoing]
To fall on Him [instead of us].
7 He was oppressed and He was afflicted,
Yet He did not open His mouth [to complain or defend Himself]; Like a lamb that is led to the slaughter,
And like a sheep that is silent before her shearers,
So He did not open His mouth.
